Affordable, small batch whiskeys aged and blended to perfection in our Elizabeth, Colorado solera
A solera is a system of aging spirits that is most commonly used for sherry but we have adopted it for the storage and aging of fine bourbon. Barrels of similar ages are grouped together in a common “layer” of the solera. Farm and Spirit’s solera has 32 barrels distributed over 8 layers, with the oldest (in layer 1) having been barreled in the year 2000. As whiskey is used, barrels are backfilled with stock from the next layer up and new stock is added to the top layer. In this fashion, younger spirits take on the more mature characteristics of the older spirits and the average age of stock in the solera increases over time.
